Fruits and veggies are not enzymes. They contain carbohydrates and proteins. Some may require digestive enzymes to be absorbed by the body, but they are not themselves enzymes.
Some enzyme supplements do work and are not completely broken down in the stomach. For example pancreatic enzyme supplements are often prescribed to people who have pancreatitis and are not secreting enough endogenous enzymes. These supplements do reach the small intestine and will work to aid in digestion. However, not all enzyme supplements are to be trusted. Lactase supplements also do work and are efffective in reducing gas and bloating in lactose intolerant patients who enjoy milk products.
Even though most enzymes are proteins, not all proteins are broken down in the digestive tract with the same efficiency or speed. Some supplemental digestive enzymes will surely get broken down before they can reach their site of action, but a portion of the appropriate dose will have their effect and will aid in digeestion.
