To break down food into smaller soluble particles. It is done physically/mechanically in the mouth ( chewing ) and in the stomach ( churning ) and chemically this is the type we are all aware of such as the breaking down of starch by saliva.
The chemical part works using enzymes which need a certain temperature range and pH range, they also work only on certain material ( substrates ).
For example bread is first chewed in your mouth then acted upon by the saliva before getting further digestion and absorbed in the small intestine.
