your gall bladder is in charge of breaking down fats with bile. When you eat fat but it can't be broken down it can irritate your intestines-- think of the effect that drinking a cup of straight olive oil has! So if the gallstones are interfering with the amount of bile your gallbladder is able to excrete, fat might just be passing through and causing an extremely laxative effect. Also a lot of people report diarrhea or loose stools after having a gallbladder removal, so that might be part of it. Do your symptoms improve when you eat low-fat foods consistently?

Another answer could be that the pain and distress your body is in (if you have a particularly painful case) is causing your body to want to get rid of everything in your abdomen to make room for your painful gallbladder.
